I’ve noticed that when i export to scorm for moodle it’s including data on every userinteraction in the data.
How can i set it up so that it only collects data from specific variables?

I am not sure if it is suitable for your needs but please try using two options in the below screenshot (you need to select the interaction, then go to the Properties pane):
