Is it possible to allow the user to choose how many questions he/she would like to be quizzed on ?

It’s not possible, the number of questions is specified when you (the author) create the quizzes, users who take the quizzes can’t change it. However, if you don’t care the overall user result (score, pass/fail…), you can separate the quizzes into multiple parts (each part contains a number of slides/questions), and create a menu on the first slide so that the user can select a part to test.
