Is there a way to set a start / stop hotkey for recording?

You can change the hot keys for recording in the Recording Settings.
To access the Recording Settings, click the Gear icon on the top right of the Record Video dialog as in below screenshot.

Thank you, but there is no hotkey for starting the recording.

Yes, there’s no hotkey for start recording because recording needs some settings each time like: recording region, webcam, audio,… so it cannot be started automatically without user interaction.
