I am using ActivePresenter 7.5.8 and when I do a screen video via Record Screen -> Record Video Slide I change the ‘Size’, that is preset at 1280x720, to another value, but when I do my recording and go to play it back it converts to 1280x720. How can I get the record screen resolution to change?

Please don’t select the Scale to Fit option in the Change Project Size dialog which appears after recording screen.
In case you chose Scale to Fit, just right-click the video on the slide and select Restore Original Size.
